12 red potatoes
1 onion, chopped
1 pound of bacon
2 cups shredded mild cheese
1 chopped green pepper
Sauce:
2 cups milk
4 tablespoons butter
4 tablespoons flour
pinch of salt
Preheat oven to 350 degrees.
Clean, peal, and cube the potatoes. Then in a large pot, boil the potatoes until tender. In a skillet or chicken cooker, saute the bacon, onion and pepper. Cook until brown, then remove from heat and drain. In a small saucepan, melt the butter. Add the flour and salt and cook until bubbly. Add milk and whisk. Heat until mixture boils. Drain potatoes and pour them into a 2 quart baking pan. Add the bacon mix and blend. Then add the sauce on top. Then top with the cheese. Bake for about 20 minutes. Serve hot.
